
Beetroot and Blueberry pancakes

Nothing says weekend mornings like a stack of warm, home made pancakes! We have topped these ones with peanut butter, an extra sprinkle of berry powder, cacao nibs and some sliced fruit.
Ingredients
1/2 | Ripe banana |
3/4 cup | Oats |
2 | Eggs |
2 scoops | Vanilla whey protein |
Pinch salt | |
2 | Cooked baby beetroot |
1/2 cup | Non-dairy milk |
2 tsps | Arctic Power Berries Blueberry Powder |
Coconut oil for cooking |
Directions
- To make the batter, combine all of the ingredients in a high powered blender and blitz until smooth and creamy.
- Heat a tsp of coconut oil in a frying pan over medium heat and once the pan is nice and hot, pour a small amount of the batter into the pan and cook until bubbles start to appear on the surface. Then flip and cook on the other side.
- Repeat this for the remaining mixture.
- Garnish with all of your favourite toppings such as another sprinkle of berry powder for extra flavour and nutrients!
