These delicious berry brownies are vegan, raw and gluten free. You can decorate them with more berry powder, cacao nibs, or any toppings of choice.

Ingredients

Brownies:

  • 1/2 cup oats (gluten free)
  • 1/2 cup pecans
  • 1/2 cup cashews
  • 1 tbsp coconut oil
  • 3 tbsp nut butter
  • 1 cup dates
  • 2 tbsps Arctic Power Berries Blackcurrant powder
  • 3 tbsp raw cacao

Frosting:

  • 4 heaped tbsp peanut butter
  • 3 tbsp maple syrup/honey
  • 3 tbsp raw cacao powder
  • Coconut/almond milk

Garnish:

  • Sprinkle of Arctic Power Berries berry powder

Directions

  1. To make the brownies, start off by combing the oats and both types of nut in a food processor and pulse these on their own for a few seconds.
  2. Add in the rest of the ingredients, then blend until sticky and well combined.
  3. Transfer this into a brownie tin and firmly press down into the base of the dish. Pop these into the freezer for a couple of hours to chill.
  4. For the frosting, mix together the peanut butter, sweetener of choice and cacao powder, then gradually drizzle in the almond milk and mix continuously until you’re left with a super creamy, spreadable consistency.
