Nothing says weekend mornings like a stack of warm, home made pancakes! We have topped these ones with peanut butter, an extra sprinkle of berry powder, cacao nibs and some sliced fruit.

Ingredients

  • 1/2 ripe banana
  • 3/4 cup oats
  • 2 eggs
  • 2 scoops vanilla whey protein
  • Pinch salt
  • 2 cooked baby beetroot
  • 1/2 cup non dairy milk
  • 2 tsps Arctic Berries Blueberry Powder
  • Coconut oil for cooking

Directions

  1. To make the batter, combine all of the ingredients in a high powered blender and blitz until smooth and creamy.
  2. Heat a tsp of coconut oil in a frying pan over medium heat and once the pan is nice and hot, pour a small amount of the batter into the pan and cook until bubbles start to appear on the surface. Then flip and cook on the other side.
  3. Repeat this for the remaining mixture.
  4. Garnish with all of your favourite toppings such as another sprinkle of berry powder for extra flavour and nutrients!
