These oat pancakes are a perfect weekend breakfast. The cinnamon gives them a nice touch. The pancakes go together perfectly with caramelised banana and an additional berry powder sprinkle on top. So delicious!

Ingredients

  • 1 banana
  • 1 cup oats
  • 2 eggs
  • 1 tsp baking powder
  • 2 tsps Arctic Power Berries Wild Blueberry powder
  • Pinch Salt
  • Pinch ground cinnamon
  • Coconut oil for cooking

Directions

  1. Mash the banana with the back of a fork, then beat in the eggs. In a bowl, combine the dry ingredients and mix everything together.
  2. Fold through the wet mixture and continue to stir until everything is well combined.
  3. Heat a little coconut oil in a frying pan over medium heat. Once the pan is nice and hot, add a little of the pancake mixture and cook until bubble start to appear on the surface, then flip and cook on the other side.
  4. Repeat this with the remaining mixture.
  5. Stack your pancakes and add your favourite toppings! Here I’ve added caramelised banana- so delicious and another sprinkle of berry powder!
