The blueberry caramel is a perfect topping for this lingonberry and apple porridge, but it can also be enjoyed as a topping for other things, such as overnight oats, yogurt or smoothies.

Ingredients

Lingonberry-Apple porridge

  • 100 ml water
  • 100 ml plant-based milk
  • 45 g rolled oats
  • 1/2 apple, peeled and chopped
  • 1 tbsp maple syrup or sweetener of choice
  • 1 tbsp flax seeds or chia seeds
  • 1 tsp cinnamon
  • pinch of salt
  • 2 tsp Arctic Power Berries Lingonberry powder

Blueberry caramel

  • 100 ml nut butter such as cashew butter or almond butter
  • 2 tbsp plant-based milk
  • 1–2 tbsp tbsp maple syrup (depending on the sweetness of the milk used)
  • 2 tsp Arctic Power Berries Blueberry powder

Directions

  1. Cook rolled oats in water and plant-based milk until creamy. Depending on the oats this might take 5-10 minutes.
  2. Add chopped apple and mash it in the warm porridge. Add sweetener, seeds, cinnamon, salt and berry powder.
  3. To make the blueberry caramel, mix all ingredients in a bowl until smooth. Use caramel as a topping for porridge, overnight oats, yogurt, smoothies or enjoy as it is!
